For my 22 before 23 birthday list, I made a goal to cook 22 recipes from 22 places. I started by making a list of countries where I either liked the food or knew nothing about the food. When I started this project, I knew I wanted to try cooking food from India. I've had Indian food out a couple of times and really enjoyed everything I tried. There are many spices in Indian food that I'm not familiar with, but wanted to learn how to cook. At the library, I looked for a cookbook that had traditional recipes, but weren't too complicated. I found the perfect book, it's called Indian Cooking Unfolded. It explains the dish well and has easy to follow recipes. Plus, all the recipes use 10 ingredients or less. Perfect for folks new to cooking Indian food.

Tandoori Chicken
origin: India
serves: 2 (original recipe was doubled to serve four)cook time: 15 minutes (quick to make, but has to marinade for at least 30 minutes)

ingredients:
1/4 cup plain yogurt
2 pieces fresh ginger (about the size of quarters; no need to peel)
2 cloves garlic
1/2 teaspoon garam masala
1/2 teaspoon coarse kosher or sea salt
1/2 teaspoon paprika
1/4 teaspoon cayenne
3/4 pound chicken (try paneer for vegetarian version!) 

directions:
Pour yogurt, ginger, garlic, garam masala, salt, paprika, and cayenne into a small blender or food processor. Blend until it forms a smooth paste. Place chicken (I cut mine into cubes for kabobs) in a bowl and cover with the spiced yogurt. Refrigerate the covered chicken for at least 30 minutes (or overnight).

After the chicken has had time to marinade, preheat the oven to 450°F or turn on the grill. Grill or bake chicken until it is cooked thoroughly. And your done! It's so simple and tasty. I served mine with whole grain rice.

If you're wanting to learn how to cook Indian food, check this book out. The recipes might not be totally authentic, but it's a good starting point to get used to the spices and style of cooking. Now, go make tandoori chicken and enjoy! xo. Laura
